For the Marinade
  • 1 cup Full-fat Plain Yogurt Substitute with coconut or almond yogurt for a dairy-free version.
  • 2 tbsp Lemon Juice Lime juice can be used as an alternative.
  • 1 tbsp Ginger Paste Freshly grated ginger can be used instead.
  • 1 tbsp Garlic Paste Freshly minced garlic works well.
For the Spices
  • 2 tsp Ground Cumin Substitute with ground coriander for a different flavor profile.
  • 2 tsp Ground Coriander
  • 1 tsp Ground Turmeric Can omit for less color.
  • 2 tsp Garam Masala Essential for an authentic taste.
  • 1 tsp Chili Powder Adjust amount to taste or omit for milder flavor.
  • 1 tsp Smoked Paprika Regular paprika can substitute if smoked isn't available.
  • 1/2 tsp Black Pepper Can substitute with white pepper for a milder taste.
  • 1 tsp Salt Adjust to taste.
For Cooking
  • 2 tbsp Oil or Ghee Any cooking oil can be used.

Method
 

Step-by-Step Instructions
  1. Rinse the chicken drumsticks under cold water and pat them dry with paper towels. Make 2-3 deep cuts into each drumstick.
  2. In a medium mixing bowl, combine full-fat plain yogurt, lemon juice, ginger paste, garlic paste, and all spices. Whisk until smooth.
  3. Thoroughly coat each chicken drumstick with the marinade, placing in a sealable bag or covered dish. Refrigerate for at least 6 hours, preferably overnight.
  4. About 30 minutes before cooking, preheat your grill or oven to 425°F (220°C).
  5. Cook the marinated drumsticks until the internal temperature reaches 165°F (75°C), about 25-30 minutes.
  6. Let the chicken rest for 5 minutes, then garnish with cilantro and lime wedges.
