- Add the chuck steak to the skillet and sear for 5-6 minutes on each side until browned. Remove from skillet.

- If using, add the hot cherry peppers and tomato paste, cooking for an additional minute.
- Stir in the peeled plum tomatoes, bay leaf, oregano, salt, dried basil, and pepper. Bring to a boil for about 3 minutes.
- Return the seared steak to the skillet, cover, and simmer on low for 1½ hours.
- Remove the bay leaf, taste the sauce, and adjust seasoning if necessary. Serve hot.
