Step-by-Step Instructions
  1. Heat the olive oil in a large skillet over medium-high heat for about 2 minutes.
  2. Add the chuck steak to the skillet and sear for 5-6 minutes on each side until browned. Remove from skillet.
  3. Sauté the sliced onion and minced garlic in the same skillet for 3-4 minutes until softened.
  4. If using, add the hot cherry peppers and tomato paste, cooking for an additional minute.
  5. Stir in the peeled plum tomatoes, bay leaf, oregano, salt, dried basil, and pepper. Bring to a boil for about 3 minutes.
  6. Return the seared steak to the skillet, cover, and simmer on low for 1½ hours.
  7. Remove the bay leaf, taste the sauce, and adjust seasoning if necessary. Serve hot.
