  • 500 g beef chuck Cut into 1-inch cubes

  • 4 cloves garlic Minced
  • 1 inch fresh ginger Grated
For the Spices
  • 2 tbsp vindaloo paste Key flavor source
  • 1 tsp turmeric powder Adds vibrant color
  • 1 tsp cumin powder Introduces warmth
  • 1 tsp coriander powder Provides subtle citrus notes
  • 1 tsp garam masala Enhances aroma and depth
For the Sauce
  • 1 tbsp vinegar Use white or apple cider vinegar
  • 1 cup water For tender beef and sauce consistency
  • Salt To taste
For Garnish
  • Fresh cilantro Chopped

Method
 

Step-by-Step Instructions
  1. Heat the vegetable oil in a heavy-bottomed pot over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes. Stir in the minced garlic and grated ginger, cooking until fragrant for an additional minute.
  2. Stir in the vindaloo paste, turmeric powder, cumin powder, and coriander powder. Toast the spices for about 30 seconds.
  3. Add the beef chuck cubes to the pot and sear for around 2 minutes on each side until browned.
  4. Pour in the vinegar and water, bring to a boil, reduce heat to low, and cover to let simmer for 45 minutes.
  5. Stir in the garam masala about 10 minutes before serving and let simmer uncovered.
  6. Garnish with fresh cilantro before serving.
