  • 1 can Black Beans drained and rinsed

  • 1 cup Oats preferably instant
  • 2 tablespoons Tomato Paste
For the Mushroom Gravy
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 8 ounces Mushrooms sliced
  • 2 cups Vegetable Broth low-sodium
  • 1 tablespoon Cornstarch to thicken the gravy

Step-by-Step Instructions
  1. Prepare the Potatoes: Peel and chop the potatoes into cubes, boil in salted water for about 15 minutes, then mash until smooth.
  2. Sauté the Vegetables: Heat oil in a skillet and sauté onion for 3 minutes, then add garlic, celery, and spices, cooking until fragrant.
  3. Combine Ingredients: In a bowl, mix the sautéed vegetables with mashed potatoes, black beans, oats, and walnuts until well combined.
  4. Shape the Meatloaf: Line a loaf pan with parchment, transfer the mixture, pack tightly, and preheat your oven to 375°F (190°C).
  5. Bake the Meatloaf: Bake for 40-50 minutes until golden brown, then cool for 15 minutes before slicing.
  6. Prepare the Mushroom Gravy: Sauté onion in a saucepan until translucent, add garlic and mushrooms until tender.
  7. Thicken the Gravy: Whisk cornstarch with water, stir into the gravy, and simmer until thickened.
