- In a large skillet over medium heat, fry 6 slices of bacon until crispy, about 5–7 minutes. Remove the bacon, crumble it into small pieces, and set aside, keeping the drippings in the pan.
- In the same skillet, add 1 pound of ground beef over medium-high heat. Brown the meat for about 5 minutes. Add 1 chopped onion and 1 chopped bell pepper, stirring occasionally until the vegetables soften and the beef is cooked through, about 4 more minutes. Drain any excess fat.
- Reduce the heat to medium, add in 1 can of pork and beans, 1/2 cup of BBQ sauce, and season with salt and black pepper to taste. Mix everything thoroughly for about 2–3 minutes.
- Transfer the mixture into a 1 ½ quart casserole dish, spreading it evenly.
- Preheat your oven to 350°F (175°C). Place the casserole dish in the oven and bake for 30 minutes.
- After 30 minutes, carefully remove the casserole and sprinkle 1 cup of shredded cheddar cheese and the crumbled bacon on top. Return to the oven for an additional 5 minutes.
