  1. Preheat your oven to 300°F (150°C).
  2. Season the beef short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown the ribs on all sides for about 3–4 minutes per side.
  3. Lower the heat and add chopped onion, carrots, and celery. Sauté for 5–7 minutes until softened. Stir in minced garlic and cook for an additional minute.
  4. Pour in red wine and scrape up browned bits from the pot. Add beef broth, tomato paste, thyme, and bay leaves. Simmer to unite flavors before adding back the ribs.
  5. Return the ribs to the Dutch oven, cover, and transfer to the oven. Braise for about 3 hours until fork-tender.
