Preparation
- In a large skillet, heat vegetable oil over medium-low heat. Add sliced onions and cook slowly for 20-30 minutes until golden brown and caramelized.
- Melt butter in the same skillet over medium heat. Sauté the mushrooms for 5-7 minutes until browned, then add cubed apples and sugar, cooking for an additional 5-8 minutes.
- Combine the onion, mushroom, and apple mixture with grated Gruyère cheese, minced chives, and dried thyme in a mixing bowl. Season with salt and pepper to taste.
- Preheat oven to 400°F (200°C). Unroll the puff pastry on a floured surface and cut into 2-inch squares. Spoon filling into the center of each square.
- Pinch edges to seal. Place on a parchment-lined baking sheet, brush with beaten egg, and bake for 15-20 minutes until golden brown and puffed.
- Let cool for a few minutes before serving warm with a dipping sauce.
