Step-by-Step Instructions
  1. In a medium bowl, combine soy sauce, brown sugar, honey, sesame oil, rice vinegar (if using), black pepper, minced garlic, grated ginger, grated Asian pear or red apple, chopped scallions, and toasted sesame seeds. Mix until blended and sugar has dissolved.
  2. Place your ribeye or sirloin in the freezer for 20 to 30 minutes. Once it's slightly frozen, slice it thinly against the grain, approximately 1/4 inch thick.
  3. Transfer the sliced beef into a large mixing bowl or resealable bag. Pour the marinade over, ensuring the beef is well-coated. Seal or cover and refrigerate for at least 30 minutes.
  4. Preheat a skillet over medium-high heat. Add neutral oil to coat the pan and heat until shimmering.
  5. Add marinated beef in small batches to the skillet. Sear each side for 1 to 2 minutes until caramelized and browned.
