For the Patty
  • 1 pound Ground Beef 80/20 for juiciness
  • 1 medium Onion thinly sliced
  • to taste Salt
  • to taste Pepper
For the Bread & Cheese
  • 8 slices Rye Bread or sourdough
  • 4 slices Swiss Cheese or provolone/pepper jack
  • 4 slices Cheddar Cheese sharp white cheddar
  • 2 tablespoons Butter or olive oil
For the Secret Sauce
  • 1/4 cup Mayo or Greek yogurt
  • 2 tablespoons Ketchup or barbecue sauce
  • 1 tablespoon Sweet Pickle Relish or diced pickles
  • 1 dash Worcestershire Sauce or soy sauce

Method
 

Instructions
  1. In a small bowl, mix together mayo, ketchup, sweet pickle relish, and Worcestershire sauce until well combined.
  2. Heat butter in a skillet; add sliced onion and cook until caramelized, about 15–20 minutes.
  3. Divide ground beef into four portions and shape into thin patties, seasoning with salt and pepper.
  4. Cook patties in the skillet for 3–4 minutes on each side until desired doneness.
  5. Butter one side of each slice of rye bread and layer with cheese, patty, onions, and more cheese.
  6. Grill sandwiches in the skillet for 2–3 minutes on each side until golden brown and cheese is melted.
  7. Remove from skillet, allow to rest for a minute, then slice and serve with secret sauce.
