Ingredients
  

For the Potatoes
  • 4 large Russet Potatoes Thoroughly washed
For the Filling
  • 8 oz Cream Cheese Can use low-fat
  • to taste Salt
  • to taste Pepper
  • 1 tsp Garlic Powder
  • 2 tbsp Chives/Green Onions For garnish
  • 1 cup Crawfish Tails Substitute with crab or scallops if desired
  • 1 cup Raw Shrimp Peeled and deveined
  • 1 tbsp Cajun Seasoning Adjust to taste
  • 1 tsp Onion Powder
  • 1 tbsp Liquid Crab Boil Optional, can replace with Cajun seasoning
For the Cheese Sauce
  • 2 tbsp Butter Can use lighter alternative
  • 2 cloves Minced Garlic Fresh
  • 1 tbsp Flour
  • 1 cup Half and Half Substitute with milk if desired
  • 8 oz American Cheese Can substitute Velveeta
  • 1 cup Mozzarella Cheese Substitutable with provolone
  • 1 cup Monterey Jack Cheese Swap with cheddar for sharper flavor
  • 1/4 cup Grated Parmesan Cheese

Method
 

Prep and Bake Potatoes
  1. Preheat your oven to 400°F (200°C). Wash and dry the potatoes, poke holes with a fork, and bake directly on the rack for 40-50 minutes.
Scoop Potatoes
  1. Once done, remove from oven, let cool slightly, slice each potato in half, and scoop out the insides.
Prepare Seafood Filling
  1. Melt butter in a skillet, add shrimp and crawfish, season with Cajun and onion powder, sauté for 3-4 minutes.
Make Cheese Sauce
  1. In the same skillet, melt butter again, whisk in flour until golden, add half and half, then cheeses, stirring until smooth.
Assemble Potatoes
  1. Fold seafood mixture into creamy potato filling, fill potato skins, and drizzle with cheese sauce.
Broil
  1. Broil stuffed potatoes on a baking sheet for 3-5 minutes until golden brown.
