  • 4 cloves Garlic minced
For Seasoning
  • 2 tbsp Old Bay Seasoning
  • 2 tbsp Cajun Seasoning adjust to taste
For Freshness
  • 1 each Lemon halved
  • 1 each Orange halved
  • 2 tbsp Vinegar apple cider or white vinegar

Method
 

Step-by-Step Instructions
  1. Clean the crawfish by rinsing thoroughly in cool water; if frozen, thaw in cool water for 20-30 minutes.
  2. In a stockpot, cover ingredients with about 6-8 quarts of water, bring to a rolling boil, then add Old Bay seasoning, Cajun seasoning, potatoes, corn, and citrus.
  3. Add sliced sausage and reduce to simmer for 15-20 minutes until the potatoes are fork-tender.
  4. Add cleaned crawfish and corn, boiling for about 5-6 minutes until crawfish shells turn red.
  5. Melt butter in a saucepan, add minced garlic and lemon juice and simmer for 3-5 minutes.
  6. Transfer to a baking sheet, drizzle garlic butter sauce, toss, and serve family-style.
