Ingredients
  

For the Shrimp Marinade
  • 1 pound Large Shrimp Fresh and plump
  • 2 stalks Lemongrass Crushed to release oils
  • 2 tablespoons Thai Chili Paste (Nam Prik Pao) Harissa can be used as a substitute
  • 1 tablespoon Fish Sauce Soy sauce can be used for a vegetarian option
  • 2 tablespoons Lime Juice Freshly squeezed for best flavor
  • 1 teaspoon Sugar Honey is a good substitute
For the Fried Rice
  • 3 cups Cooked Jasmine Rice Ideally day-old
  • 1 tablespoon Vegetable Oil To prevent sticking
  • 2 cloves Garlic Minced
  • 2 cups Mixed Vegetables Include peas, carrots, bell pepper
  • 1 cup Green Onions Chopped
  • 1 cup Fresh Basil Leaves
  • to taste Salt
  • to taste Pepper

Method
 

Marinade Preparation
  1. In a mixing bowl, combine finely minced lemongrass, Thai chili paste, fish sauce, lime juice, and sugar. Stir until fully combined.
  2. Add large shrimp to the marinade, coating thoroughly, and let it marinate for at least 20 minutes.
Fried Rice Preparation
  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds.
  3. Toss in the mixed vegetables and stir-fry for about 3-4 minutes.
  4. Add the cooked rice, break clumps gently, and stir-fry for 2-3 minutes.
  5. Season with lime juice, salt, and pepper to taste.
  6. Stir in fresh basil leaves and green onions until wilted.
Shrimp Cooking
  1. Prepare the grill over medium-high heat and lightly brush with vegetable oil.
  2. Grill the marinated shrimp for 2-3 minutes on each side until cooked through.
Serving
  1. Plate the shrimp atop the fried rice, drizzle with remaining marinade, and garnish with lime wedges.
