  • 2-3 cups Cooked Turkey Shredded or chopped
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 medium Bell Pepper Diced
  • 2 medium Carrots Diced
  • 2 stalks Celery Diced
  • 1 cup Frozen Peas
  • 2 cups Chicken Broth Low sodium recommended
  • 2 tablespoons Chicken Bouillon Powder or cubes
  • 2 tablespoons Flour All-purpose or gluten-free
  • 1 cup Milk Whole or lighter version
  • 1 tablespoon Dried Parsley
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Sage
For the Topping
  • 4 cups Mashed Potatoes Gruyere-infused preferred
  • 1 tablespoon Unsalted Butter
  • 1 tablespoon Olive Oil
  • 1 cup Shredded Gruyere Substitute with cheddar if desired

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, melt butter and olive oil. Add diced onion, bell pepper, carrots, and celery; sauté until the onion is translucent.
  2. Sprinkle flour over the vegetables, stirring constantly for about 2 minutes. Gradually pour in chicken broth and milk while whisking until smooth.
  3. Increase heat to bring sauce to a gentle simmer. Allow to thicken for about 5-7 minutes, stirring occasionally until desired consistency is reached.
  4. Stir in cooked turkey and frozen peas into the sauce, cooking for an additional minute until heated through.
  5. Remove from heat and spread prepared mashed potatoes over the turkey filling, creating soft peaks with a spatula.
  6. Preheat oven to 375°F. Bake for 30 minutes, or until edges are bubbling and top is golden brown. Broil for an additional 2-3 minutes if desired.
