Step‑by‑Step Instructions
  1. Preheat the oven to 180°C (350°F) and line a baking dish with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a bowl, mix self-raising flour, salt, pepper, and onion until combined. Stir in shredded cheese.
  4. Fold the grated zucchini into the dry ingredients until combined.
  5. In another bowl, whisk eggs, oil, and parsley together, then add into the dry mixture. Mix until just combined.
  6. Pour the mixture into the baking dish, smoothing the top. Bake for 30-35 minutes until golden.
  7. Allow to cool for about 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice into squares or wedges and serve warm or at room temperature.
