Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat and sauté diced onions, carrots, and red bell peppers for about 5-7 minutes.
  3. Add minced garlic and Italian herbs, cooking for an additional 1-2 minutes. Season with salt and pepper to enhance the flavors.
  4. In a mixing bowl, whisk together the eggs, milk, and half of the mozzarella cheese, seasoning with salt and pepper.
  5. Add the sautéed vegetables and broccoli to the egg mixture and stir gently.
  6. Lightly grease a 9x9-inch baking dish and pour in the veggie-egg mixture, spreading it evenly.
  7. Sprinkle the remaining mozzarella cheese over the top.
  8. Bake for 25-30 minutes until set and golden brown on top.
  9. Remove from oven and allow to cool for about 5 minutes before slicing.
