Method
 

Preparation Steps
  1. Start by rinsing fresh cucumbers under cold water and slicing them thinly, about 1/8 inch thick.
  2. In a separate bowl, combine rice vinegar, sugar, and sesame oil, whisking until the sugar dissolves.
  3. Add a pinch of chili flakes into the dressing, stirring well to combine.
  4. Pour the dressing over the bowl of cucumber slices and gently toss to coat.
  5. Add the chopped green onions to the cucumber mixture and toss again.
  6. Let the salad sit for 10-15 minutes at room temperature to allow flavors to meld.
  7. Before serving, sprinkle with toasted sesame seeds and toss gently to distribute.
