Method
 

Cooking Steps
  1. Preheat your oven to 150°C (300°F). Gather your ingredients while the oven heats.
  2. Pat the lamb shoulder dry using paper towels. Place it in a roasting pan, equipped for even heat distribution.
  3. In a mixing bowl, combine minced garlic, chopped fresh rosemary, olive oil, Dijon mustard, honey, salt, and pepper to create the marinade. Rub it all over the lamb.
  4. Arrange quartered onions around the lamb in the roasting pan.
  5. Pour vegetable broth around the lamb and add white wine if using.
  6. Cover with aluminum foil and roast in the preheated oven for 3-4 hours until fork-tender.
  7. During the last 30 minutes, remove the foil to brown the lamb's crust.
  8. Once cooked, remove from the oven and let the lamb rest for 15 minutes before slicing.
