  2. Cover the bowl with a clean kitchen towel and let it rise in a warm place for 30-60 minutes, or until it has doubled in size.
Preparing to Bake
  1. While the dough rises, preheat your oven to 450°F (230°C) and prepare two baking sheets lined with parchment paper.
  2. In a large pot, bring 9 cups of water and ½ cup of baking soda to a vigorous boil.
Shaping and Boiling
  1. Once the dough has risen, punch it down gently, divide it into 12 equal pieces, and roll each into a rope about ½ inch thick.
  2. Cut the ropes into 1-2 inch pieces, then carefully add them to the boiling water, cooking for 30 seconds before removing with a slotted spoon.
