For the Honey Butter
  • 1/4 cup honey
  • 1/2 cup softened butter use dairy-free butter if needed

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Prepare your mini muffin tin by greasing it or lining it.
  3. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  4. In another bowl, whisk the buttermilk, eggs, and melted butter.
  5. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  6. Gently fold in the sweet corn kernels and honey.
  7. Spoon the batter into the muffin tins, filling each about ¾ full.
  8. Bake for 12-15 minutes, until golden brown and a toothpick comes out clean.
  9. Prepare the honey butter by mixing softened butter and remaining honey until creamy.
  10. Once baked, brush the tops with melted butter and sprinkle with sea salt.
