For the Marinade
  • 2 pounds beef cut into cubes
  • 1/2 cup vinegar white or apple cider
  • 2 teaspoons chili flakes adjust to taste
  • 1 tablespoon grated ginger or ground ginger
  • 4 cloves garlic minced or garlic powder
For the Curry
  • 2 tablespoons oil vegetable or ghee
  • 1 large onion finely chopped
  • 2 tablespoons tomato paste or fresh tomatoes
  • 1 cup beef stock or vegetable stock
  • 1 tablespoon brown sugar or honey/coconut sugar
  • 1 teaspoon paprika smoked paprika optional
  • to taste salt
  • to taste pepper
For the Spice Blend
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon mustard powder
  • 1/2 teaspoon cinnamon powder

Method
 

Step-by-Step Instructions
  1. In a bowl, combine the vinegar, chili flakes, grated ginger, and minced garlic. Rub this marinade thoroughly over the beef, cover, and let it marinate for at least 1 hour.
  2. Heat 2 tablespoons of oil in a skillet over medium heat. Sauté the onions for 5–7 minutes until soft and golden.
  3. Add the marinated beef and any leftover marinade to the skillet. Stir in 2 tablespoons of tomato paste and cook for 3–4 minutes.
  4. Pour in 1 cup of beef stock, bring to a simmer, cover, and cook on low for 30–45 minutes until the beef is tender.
  5. Taste and adjust seasoning with salt, pepper, or brown sugar if desired. Serve hot over rice or with paratha.
