Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Allow about 10 minutes for the oven to heat up.
  2. Wash and chop the Yukon Gold potatoes into bite-sized pieces, roughly 1-inch cubes.
  3. In a large mixing bowl, combine the chopped potatoes with chili powder, cumin, paprika, garlic powder, and olive oil. Toss until well-coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the oven and roast for 25-30 minutes, flipping midway for even cooking.
  6. Remove the potatoes from the oven and garnish with chopped cilantro and lime juice. Serve hot.
