  • 1 cup Reduced-Fat Cheddar Cheese or nutritional yeast for vegan version
  • 1 teaspoon Dried Thyme
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, toss with olive oil, salt, and pepper, and spread on a baking sheet. Roast for 20-25 minutes.
  3. In a skillet, heat olive oil and sauté minced garlic and diced onion for 1-2 minutes until fragrant.
  4. Add spinach to the skillet and cook for 3-5 minutes until wilted.
  5. Combine the roasted sweet potatoes with the spinach mixture in a bowl, season to taste, and mix well.
  6. Transfer to a greased baking dish, optionally top with additional spinach, and bake for 20-25 minutes until bubbly.
