Method
 

Prep and Assemble Kabobs
  1. In a large mixing bowl, combine beef cubes, chopped bell peppers, onion chunks, and mushrooms. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and optional paprika. Mix well to coat.
  2. Soak wooden skewers in water for 30 minutes to prevent burning.
  3. Thread the marinated steak and vegetables onto skewers in an alternating pattern. Leave space between pieces for even cooking.
  4. Preheat the grill to medium-high (about 400°F).
  5. Place kabobs on the grill and cook for 10-12 minutes, turning occasionally for even char.
  6. While kabobs are grilling, whisk together melted butter, minced garlic, chopped parsley, and lemon juice to make the garlic butter.
  7. Remove kabobs from the grill and brush generously with garlic butter before serving.
