- Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- In a small bowl, combine flour, baking soda, and salt. Whisk until evenly mixed.
- In a stand mixer, beat together butter, white sugar, and brown sugar until creamy. Add eggs one at a time, mixing well after each. Stir in vanilla and almond extracts.
- Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Fold in chocolate chips and chopped freeze-dried strawberries.
- Portion the dough into balls about 1½ inches in diameter and place on the lined cookie sheet, spaced about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes. Edges should be lightly golden while centers remain soft. Let them cool for 2-3 minutes before transferring to a wire rack.
