Step-by-Step Instructions
  1. Wash the cucumbers thoroughly. Slice them into thin rounds, approximately 1/8 to 1/4 inch thick, and place in a large salad bowl.
  2. Microwave the frozen corn kernels for about 2-3 minutes until thawed. Fold the corn into the bowl with the cucumbers.
  3. Sprinkle the crumbled cotija cheese and chopped cilantro over the mixture and stir carefully.
  4. In a separate bowl, whisk together mayonnaise, lime juice, minced garlic, chili powder, and a pinch of salt and pepper.
