  • 2 tbsp Fresh Lemon Juice Lime juice is a good alternative.
  • 1 tsp Salt
  • 1 tsp Black Pepper

Method
 

Step-By-Step Instructions
  1. In a food processor, blend together the red bell pepper, fresh parsley, and garlic cloves until chunky.
  2. In a large mixing bowl, combine the lamb chops with the marinade, oregano, thyme, smoked paprika, onion powder, and olive oil. Massage into the meat and refrigerate for at least 1 hour.
  3. Remove marinated lamb chops from the refrigerator and let sit at room temperature for 20-30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. In a cast iron skillet, heat olive oil over medium-high heat. Sear the lamb chops for 1-2 minutes per side until golden.
  6. Transfer the skillet to the oven and bake for 10-12 minutes or until the internal temperature reaches 130°F (54°C).
  7. Remove from the oven and let rest for 3-5 minutes.
  8. Garnish with fresh parsley and serve.
