  • 1 ¾ cups All-Purpose Flour Whole wheat flour can be used for added nutrition
  • 1 teaspoon Baking Soda

  • ¼ teaspoon Salt

Step-by-Step Instructions
  1. Cream together ½ cup of softened butter and ¾ cup of Lakanto Monkfruit Sweetener until light and fluffy. This should take about 2-3 minutes. Beat in 2 large eggs and ½ cup of sour cream until well combined.
  2. In a separate bowl, whisk together 1 ¾ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ¼ teaspoon of salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently. Alternate with 3 mashed ripe bananas until just mixed, being careful not to overmix.
  4. Preheat your oven to 350°F and grease a loaf pan. Pour the batter into the pan and smooth the top. Bake for approximately 50 minutes, or until a toothpick comes out clean.
  5. Remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.
