For the Salad
  • 3-4 ears Corn on the Cob Remove kernels
  • 2 medium Peaches Ripe but firm
  • 0.5 medium Red Onion Finely diced
  • 1 medium Jalapeño Seeded and diced, adjust to taste
  • 0.25 cup Fresh Cilantro Chopped
For the Dressing
  • 2 tablespoons Honey Maple syrup can be a vegan alternative
  • 2 tablespoons Fresh Lime Juice Recommended for maximum flavor
  • 1 pinch Kosher Salt Adjust according to taste

Method
 

Preparation
  1. Remove the kernels from 3-4 ears of corn and place in a large bowl.
  2. Dice 2 peaches into bite-sized pieces and add to the bowl.
  3. Finely dice half a red onion and add it along with a seeded diced jalapeño.
  4. Chop ¼ cup of fresh cilantro and add to the mixture.
  5. In a small bowl, whisk together honey, lime juice, and a pinch of salt to create the dressing.
  6. Drizzle the dressing over the salad and gently toss to combine.
  7. Serve immediately or chill for 30 minutes before serving.
