  • 1 cup Celery finely diced
  • 1/2 cup Red Onion finely diced
For the Dressing
  • 1 cup Plain Greek Yogurt or non-dairy yogurt
  • 1/4 cup Mayonnaise low-fat or vegan options available
  • 1/4 cup Fresh Basil chopped
  • 1 clove Garlic minced
  • 2 tablespoons Lemon Juice or lime juice for a twist

Method
 

Preparation Steps
  1. Cook and shred the chicken, or use store-bought shredded chicken. Place it in a large mixing bowl.
  2. Chop the sun-dried tomatoes, finely dice the celery and red onion, and add them to the mixing bowl.
  3. In a separate bowl, mix the Greek yogurt and mayonnaise until smooth. Add basil, garlic, lemon juice, salt, and pepper.
  4. Pour the dressing over the chicken and veggies. Toss gently to coat everything evenly.
  5. Serve the salad on fresh greens, in a pita, or as a sandwich. Enjoy cold for the best flavor!
