- Season the beef short ribs generously with salt and pepper on all sides and marinate for 15 minutes.
- In a skillet over medium-high heat, heat olive oil and sear the ribs for 3-4 minutes on each side until golden.
- Sauté sliced onions in the same skillet for 5 minutes until soft, then add minced garlic for another minute.
- Pour in beef broth, soy sauce, Worcestershire sauce, brown sugar, tomato paste, vinegar, smoked paprika, and thyme. Simmer for 2-3 minutes.
- Pour the sauce over the ribs in the crockpot, making sure each rib is coated.
- Cook on low for 8 hours until the meat is tender and falls off the bone.
- Serve the ribs with some sauce drizzled on top and garnish with chopped parsley.
