  • 1 pound Raw Extra-Lean Ground Beef Substitutable with ground turkey
  • 1 cup Finely Chopped Mushrooms Diced bell peppers or zucchini can work well

  • 1 cup Panko Bread Crumbs Traditional breadcrumbs can be used
  • 2 large Egg Whites or Fat-Free Liquid Egg Substitute Whole eggs can enrich the flavor
  • 2 cloves Chopped Garlic Garlic powder can be substituted
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Ground Nutmeg
For the Creamy Mushroom Sauce
  • 2 cups Sliced Mushrooms Various mushroom types can be used
  • 1 medium Chopped Onion Shallots can replace for nuanced flavor
  • 8 ounces Light/Reduced-Fat Cream Cheese Greek yogurt is a lighter alternative
  • 2 tablespoons Light Butter Consider olive oil for a dairy-free option
  • 1 tablespoon Dijon Mustard Yellow mustard can be substituted
  • 2 tablespoons White Wine Vinegar Lemon juice can be an alternative

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C) and prepare the muffin pan with nonstick spray.
  2. In a large mixing bowl, combine the meatloaf ingredients and mix until cohesive.
  3. Fill muffin cups with the meatloaf mixture, pressing it down gently.
  4. Bake for approximately 35 minutes until edges are browned and firm to the touch.
  5. While the mini meatloaves bake, sauté the mushrooms and onions for 5-7 minutes.
  6. Add cream cheese, butter, mustard, and vinegar to softened mushrooms and stir until smooth.
  7. Remove from oven, cool slightly, loosen edges with a knife, and serve topped with mushroom sauce.

Notes

For better shape retention, chill the meat mixture before filling the muffin pan. These make excellent leftovers and are great for freezing.
