For the Chicken
  • 4 pieces Chicken breasts Boneless and skinless
  • 1 cup Pineapple juice For marinating
  • 1/4 cup Soy sauce Low sodium preferred
  • 2 tablespoons Brown sugar For sweetness
  • 1 tablespoon Ginger Grated
  • 2 cloves Garlic Minced
  • 1 teaspoon Black pepper Freshly ground
  • 1 teaspoon Salt To taste
For Topping
  • 1 cup Pineapple slices Fresh or canned
  • 1 tablespoon Fresh cilantro Chopped

Method
 

Preparation
  1. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, ginger, garlic, salt, and pepper.
  2. Add chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
Cooking
  1. Preheat the grill over medium-high heat.
  2. Grill the marinated chicken for 6-7 minutes on each side, or until cooked through.
  3. In the last few minutes, add pineapple slices to the grill and cook until charred.
  4. Remove from grill and let rest for 5 minutes before serving.
  5. Garnish with fresh cilantro before serving.
