Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess grease, stir in taco seasoning and water, and simmer for 3-4 minutes.
  3. Add black beans, corn, and diced tomatoes to the skillet. Heat for an additional 2 minutes until warm.
  4. Spread a layer of salsa in the baking dish. Layer tortillas, half of the beef mixture, sour cream, and cheeses. Repeat layers, finishing with a tortilla and cheese on top.
  5. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until golden.
  6. Let rest for 5 minutes. Serve with sour cream, cilantro, and green onions.
