Ingredients
  

For the Marinade
  • 1/4 cup Olive Oil
  • 2 tablespoons Balsamic Vinegar or red wine vinegar
  • 2 cloves Garlic minced
  • 1 handful Fresh Herbs like thyme or rosemary
  • to taste Salt & Pepper
For the Veggies
  • 2 medium Bell Peppers chopped
  • 1 medium Zucchini chopped
  • 1 medium Red Onion chopped
  • 1 cup Cherry Tomatoes halved

Method
 

Prep Marinade
  1. In a medium-sized mixing bowl, combine olive oil, balsamic vinegar, minced garlic, and fresh herbs. Whisk until well-blended.
Chop Veggies
  1. Wash and chop bell peppers, zucchini, red onion, and cherry tomatoes into 1-inch pieces.
Marinate
  1. Place chopped veggies in the bowl with the marinade. Toss gently and cover with plastic wrap. Let marinate for at least 15 minutes.
Preheat Grill
  1. Preheat your grill to medium-high heat, around 375°F to 400°F.
Grill Veggies
  1. Place the marinated veggies on the grill in a single layer. Close the lid and cook for about 10 minutes, turning occasionally.
Serve
  1. Remove grilled veggies from the grill and transfer to a serving platter. Serve warm.
