Preparation Steps
  1. Start by trimming the ends off the medium-sized zucchinis and slice them lengthwise into 1/2-inch thick slices.
  2. Prepare three shallow bowls: one with all-purpose flour, one with a beaten egg, and one with a mixture of panko breadcrumbs, dried parsley, and freshly grated Parmesan cheese.
  3. Coat each zucchini slice in flour, dip in the beaten egg, and finally coat with the breadcrumb mixture, ensuring even coverage.
  4. In a large skillet, pour enough vegetable oil to cover the bottom and heat over medium-low until shimmering.
  5. Gently add 2-3 zucchini slices to the hot oil at a time, frying for about 3-4 minutes on each side until golden brown.
  6. Layer the crisp-fried zucchini slices in a baking dish, topping each slice with fontina and mozzarella cheeses. Broil for 2-3 minutes until the cheese is melted.
  7. Spoon marinara sauce over the cheesy zucchini layers and sprinkle remaining cheese on top. Broil for another 2-3 minutes until bubbly.
