- Start by trimming the ends off the medium-sized zucchinis and slice them lengthwise into 1/2-inch thick slices.
- Prepare three shallow bowls: one with all-purpose flour, one with a beaten egg, and one with a mixture of panko breadcrumbs, dried parsley, and freshly grated Parmesan cheese.
- Coat each zucchini slice in flour, dip in the beaten egg, and finally coat with the breadcrumb mixture, ensuring even coverage.
