- In a mixing bowl, combine the oats, chia seeds, coconut milk, non-dairy yogurt, maple syrup, salt, and vanilla. Stir well until fully combined.
- Transfer the oat mixture evenly into four jars, filling each halfway.
- Chop the ripe mango into small cubes and layer about 2 tablespoons into each jar on top of the oat mixture.
- Top each jar with the remaining oat mixture, leaving some space at the top.
- Add additional chopped mango on top, around 2 tablespoons per jar.
- Seal the jars tightly and refrigerate for at least 8 hours, or up to 4 days.
- Before serving, stir the oats and add optional toppings like toasted coconut or extra mango.
