For the Topping
  • 1 medium chopped mango Fresh or frozen, adjust quantity as desired.

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the oats, chia seeds, coconut milk, non-dairy yogurt, maple syrup, salt, and vanilla. Stir well until fully combined.
  2. Transfer the oat mixture evenly into four jars, filling each halfway.
  3. Chop the ripe mango into small cubes and layer about 2 tablespoons into each jar on top of the oat mixture.
  4. Top each jar with the remaining oat mixture, leaving some space at the top.
  5. Add additional chopped mango on top, around 2 tablespoons per jar.
  6. Seal the jars tightly and refrigerate for at least 8 hours, or up to 4 days.
  7. Before serving, stir the oats and add optional toppings like toasted coconut or extra mango.
