Preparation Steps
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash the sweet potatoes thoroughly and prick holes in each potato, then bake for about 60 minutes.
- Heat olive oil in a large pot over medium heat. Add ground turkey and sauté for 5 to 7 minutes.
- Add diced yellow onion and minced garlic, sauté for 3 to 4 minutes until onion is translucent.
- Stir in kidney or black beans, tomato sauce, tomato paste, chili powder, oregano, cumin, and water. Mix well.
- Bring the chili mixture to a gentle simmer and cook uncovered for about 15 minutes.
- Remove baked sweet potatoes from the oven, slice open, and mash the insides slightly.
- Spoon about 3/4 cup of chili mixture into each sweet potato and top with cheddar cheese.
- Return to the oven and bake for an additional 5 minutes until cheese is melted.
- Remove from the oven, garnish with cilantro or green onions, and serve.
