Ingredients
  

For the Chili
  • 2 tablespoons Olive Oil consider avocado oil as a substitute
  • 1 pound Ground Turkey can substitute with ground chicken or beef
  • 1 large Yellow Onion can substitute with shallots or leeks
  • 2 cloves Garlic or use garlic powder (1/4 tsp per clove)
  • 1 cup Tomato Sauce adjust other liquids if omitting tomato paste
  • 2 tablespoons Tomato Paste concentrates flavor
  • 1 can Kidney or Black Beans substitute with pinto or chickpeas
  • 2 tablespoons Chili Powder adjust to taste for heat level
  • 1 teaspoon Oregano dried Italian seasoning can work instead
  • 1 teaspoon Cumin no direct substitutes
  • 1/2 cup Water consider low-sodium broth for flavor
  • to taste teaspoon Salt adjust according to taste
For the Sweet Potatoes
  • 4 Sweet Potatoes smaller-sized is preferable
For the Topping
  • 1 cup Shredded Cheddar Cheese swap with Monterey Jack or vegan cheese
  • 1/4 cup Cilantro or Green Onions for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the sweet potatoes thoroughly and prick holes in each potato, then bake for about 60 minutes.
  3. Heat olive oil in a large pot over medium heat. Add ground turkey and sauté for 5 to 7 minutes.
  4. Add diced yellow onion and minced garlic, sauté for 3 to 4 minutes until onion is translucent.
  5. Stir in kidney or black beans, tomato sauce, tomato paste, chili powder, oregano, cumin, and water. Mix well.
  6. Bring the chili mixture to a gentle simmer and cook uncovered for about 15 minutes.
  7. Remove baked sweet potatoes from the oven, slice open, and mash the insides slightly.
  8. Spoon about 3/4 cup of chili mixture into each sweet potato and top with cheddar cheese.
  9. Return to the oven and bake for an additional 5 minutes until cheese is melted.
  10. Remove from the oven, garnish with cilantro or green onions, and serve.
