Step-by-Step Instructions for Chipotle Chicken Avocado Melt
  1. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  2. In a small bowl, combine mayonnaise and canned chipotle adobo sauce to taste, mixing until well blended.
  3. Layer shredded Colby Jack cheese on one slice of bread, followed by half of the sliced avocado. In a separate bowl, mix cooked shredded chicken with BBQ sauce and spoon onto the other slice of bread.
  4. Close the sandwich with the chipotle mayo sides facing inward and press down slightly.
