Step-by-Step Instructions for Chipotle Chicken Avocado Melt
- Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
- In a small bowl, combine mayonnaise and canned chipotle adobo sauce to taste, mixing until well blended.
- Layer shredded Colby Jack cheese on one slice of bread, followed by half of the sliced avocado. In a separate bowl, mix cooked shredded chicken with BBQ sauce and spoon onto the other slice of bread.
- Close the sandwich with the chipotle mayo sides facing inward and press down slightly.
- Heat a skillet over medium heat and melt the remaining tablespoon of butter. Add the sandwich to the skillet.
- Cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes, optionally adding water to create steam for extra meltiness.
