Dressing
  • 1 cup Cilantro Fresh
  • 2 tablespoons Lime Juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 teaspoon Sea Salt
  • 1 teaspoon Ground Cumin
  • 0.5 cup Avocado Oil Or any neutral oil
Slaw
  • 2 cups Savoy Cabbage Shredded
  • 1 cup Purple Cabbage Shredded
  • 3 pieces Green Onions Finely chopped
Mango Salsa
  • 2 pieces Mango Diced
  • 0.25 cup Cilantro Chopped
  • 1 piece Red Onion Finely chopped
  • 1 piece Jalapeño Minced, to taste
  • 1 tablespoon Lime Juice
  • 1 pinch Sea Salt
Fish
  • 4 pieces Fish Fillets Cod or halibut recommended
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
Toppings
  • 4 pieces Lime Wedges
  • 2 pieces Ripe Avocados Sliced
  • 0.5 cup Extra Cilantro For garnish

Method
 

Cilantro Dressing
  1. In a blender, combine cilantro, lime juice, garlic, sea salt, ground cumin, and avocado oil. Blend until emulsified and smooth, about 30 seconds.
Prepare Slaw
  1. In a large mixing bowl, toss together savoy cabbage, purple cabbage, and green onions. Drizzle with half of the cilantro dressing, mixing thoroughly. Refrigerate for at least 20 minutes.
Prepare Mango Salsa
  1. In a medium bowl, combine mangoes, cilantro, red onion, jalapeño, lime juice, and sea salt. Gently mix and let sit for 15 minutes.
Cook Fish
  1. Preheat your grill to medium-high heat. Pat fish fillets dry and season with smoked paprika, onion powder, and garlic powder. Grill for 4-5 minutes on each side.
Assemble Bowls
  1. Place grilled fish fillets on plates and offer bowls of slaw, mango salsa, lime wedges, avocados, and extra cilantro for customization.
