  • 1 cup Sweet Corn canned or frozen, thawed if frozen
  • 1 cup Red Bell Pepper diced
  • 1 cup Orange Bell Pepper optional, diced
  • 1 small Red Onion chopped
  • 1/2 cup Cilantro chopped
For the Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons White Wine Vinegar or apple cider vinegar
  • 1 large Fresh Lime Juice about 1 lime
  • 1 teaspoon Sugar or honey
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Chili Powder
  • to taste Kosher Salt

Preparation Steps
  1. Begin by thoroughly rinsing and draining the black beans and black-eyed peas in a colander, then pat them dry with a paper towel.
  2. If using frozen corn, thaw it in warm water or allow it to sit at room temperature for a quick defrost.
  3. Dice the red and orange bell peppers, chop the red onion, and finely chop the cilantro.
  4. Set everything aside in separate bowls for easy mixing.
Combine Ingredients
  1. In a large mixing bowl, gently combine the rinsed black beans, black-eyed peas, and sweet corn with the diced red and orange bell peppers and red onion.
  2. If you enjoy a touch of heat, feel free to add diced jalapeños at this stage.
  3. Stir the mixture carefully to maintain the integrity of the beans while ensuring an even distribution of ingredients.
Make Dressing
  1. In a separate bowl, whisk together olive oil, white wine vinegar, and fresh lime juice.
  2. Add sugar, garlic powder, and chili powder, along with kosher salt to taste.

Mix Everything
  1. Pour the dressing over the bean and vegetable mixture.
