  • 3 tablespoons Butter or substitute with olive oil for a lighter option
  • 2 tablespoons Lemon Juice freshly squeezed, adjust to taste
  • 1 tablespoon Olive Oil or avocado oil as a substitute
  • 1/4 cup Basil Leaves minced, can substitute with parsley or cilantro
  • 1 teaspoon Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Boil 3 cups of water in a large saucepan over high heat until rolling.
  2. Add 2 cups of pearl couscous, 1 tsp salt, and 1 tbsp olive oil to the boiling water. Stir to prevent sticking.
  3. Cover the saucepan and reduce heat to low. Let the couscous simmer for 15 minutes.
  4. After 15 minutes, drain any excess water, then return couscous to low heat and stir in 3 tbsp butter and juice of 2 lemons.
  5. Once the butter is melted, fold in the minced basil.
  6. Serve warm as a side dish for grilled chicken or seafood.
