  • 1 pound Boneless, Skinless Chicken Breast Diced
For the Orzo
  • 1 cup Orzo Pasta
For the Vegetables
  • 2 cups Mixed Vegetables (bell peppers, carrots, broccoli) Chopped
For Cooking
  • 3 tablespoons Olive Oil Divided
  • 2 cloves Garlic Fresh, minced
For Flavoring
  • 1 whole Lemon Zested and juiced
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper
For Moisture
  • 1/2 cup Chicken Broth Low-sodium preferred
For Garnishing
  • 1/4 cup Fresh Parsley Chopped, optional

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add orzo pasta and cook for 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season chicken with salt, pepper, and oregano, then cook for 5-7 minutes until golden brown. Remove from skillet.
  3. Add 1 tablespoon of olive oil to the skillet, then sauté garlic for 30 seconds. Add mixed vegetables and cook for 3-4 minutes until tender-crisp.
  4. Return chicken and orzo to the skillet. Pour in lemon juice, zest, and chicken broth, stir gently for 2-3 minutes until heated through.
  5. Taste and adjust seasoning. Garnish with parsley and serve.
